No-bake Chewy Granola Bites

One of my Mexican mamas, Marcela, has an amazing catering company in El Paso, Texas, called MLH Living. Although she loves to bake, I asked her to share a no-bake recipe with me for MANNA since I am a dismal baker. Marcela’s chewy granola bites are perfect because you can swap out ingredients to suit your preferences or to change it up. No-bake and healthy. Just  throw it all in a bowl and roll it up.

Ingredients
1 cup rolled oats
½ cup peanut or almond butter
½ cup chocolate chips (optional)
½ cup of nuts (cashews, almonds, pecans)
⅓ cup agave syrup or honey
⅓ cup dried cranberries or dried blueberries
1 tablespoon of chia or flax seeds (add more if you want)

Method
1.Mix all the ingredients in a bowl and put the bowl in the refrigerator for 2 hours.
2.Take the bowl out of the fridge and roll le mélange into balls.

Notes
-First time around I had trouble getting everything to stick together so I added some extra oats and some extra peanut butter and honey. Love the flexibility of this recipe!

-Store in the refrigerator in an air-tight container up to a week.

-You can use an ice cream scoop for quick perfect balls.
